What happens here is simple and old: somebody wants to buy, somebody wants to sell, and an exchange stands between them and quotes a rate. What has changed is that the same work can now be done with a ledger whose every line can be followed.

Rates are read from several sources and compared, and withheld when they disagree. Every change to a balance is double-entered. Everything staff do to your account is recorded under their own name.
